These chocolate chip bar cookies taste just like a regular chocolate chip cookie but with less work involved. Instead of separating the dough like you would for cookies, you can just bake the batch and cut them into convenient squares which definitely saves times.

- Butter – I use unsalted butter. Butter should be slightly soft.
- Sugar – a combination of light brown sugar and granulated.
- Egg – use a room temperature egg. Remove from the fridge 20 minutes before use.
- Vanilla – use good quality vanilla extract or vanilla bean paste.
- Salt – regular or sea salt.
- Bicarbonate soda – also known as baking soda.
- Flour – use plain or all-purpose flour.
- Cornflour - also known as cornstarch.
- Chocolate chips – use milk or dark chocolate chips.

How to Make Chocolate Chip Cookie Bars
Start by preheating the oven to 160oC and lining an 8 inch/20cm square baking tray with baking paper.
Combine the butter and sugar
In a mixing bowl, combine the butter and both sugars until light and fluffy. If using a stand mixer, use the paddle attachment.
Mix in the remaining ingredients
Add in the egg and vanilla extract then combine then mix in the salt, bicarbonate and flour followed by the chocolate chips. The mixture will be quite thick.
Bake the cookie bars
Transfer the mixture to the lined baking tin and use a palette knife to spread the mixture evenly. Bake for 30 minutes or until cooked through.
Cool
Place the baking tin onto a cooling rack to allow the cookie bar to cool in the tin then cut into 16 bars and enjoy!
Storage
You can store these cookie bars in an airtight container at room temperature for around 5 days.

Chocolate Chip Cookie Bars
Ingredients
- 90g unsalted butter slightly soft
- 75g soft light brown sugar
- 50g granulated sugar
- 1 large egg
- ¾ teaspoon vanilla extract

- 140g chocolate chips milk or dark
Instructions
- Preheat the oven to gas mark 3/325oF/160oC/140℃ fan and line an 8 inch/20cm square baking tray with baking paper.
- Cream the butter and both sugars together until well combined. If using a stand mixer, do this using the paddle attachment. Mix in the egg, vanilla extract, salt and bicarbonate then mix in the flour and chocolate chips.
- Add the thick mixture to the lined baking tin and use a palette knife to spread the mixture evenly in the tin. Bake for 30 minutes or until cooked through then place the baking tin onto a cooling rack to allow the cookie bar to cool in the tin. Once cooled, cut into 16 bars and enjoy!
