This recipe makes a simple lemon and herb chicken that is cooked in a delicious marinade and can be served as a main with your favourite side dish. It is quick and easy to make so its the perfect mid-week recipe.

This lemon and herb chicken is one of my favourite recipes. My family also love this recipe and we enjoy it at least once a week. It is the perfect mid-week meal as it quick and very easy to prepare. This recipe uses chicken breasts but I also use this marinade on chicken wings and it’s just as delicious.
The chicken is coated in a lemony marinade that is made up of extra virgin olive oil, lemon and a selection of herbs. It is then grilled for the best flavour. The chicken is succulent, flavoursome and goes perfectly with a Mediterranean style salad.

- Chicken - use chicken breast fillets.
- Seasonings - use salt, black pepper and onion granules to season the chicken.
- Marinade - I use, extra virgin olive oil, lemon juice squeezed from one lemon, minced garlic, fresh oregano, fresh rosemary, fresh thyme, fresh sage and fresh parsley.

How to Make Grilled Lemon and Herb Chicken
Season the chicken: In a bowl, season the chicken with the salt, black pepper and onion granules. Mix the seasonings into the chicken and set aside.
Make the marinade: Combine the olive oil, lemon juice, minced garlic, chopped oregano, rosemary, thyme, fresh sage and parsley in a medium sized bowl.
Marinate the chicken and refrigerate: Place the chicken in the marinade and mix to ensure the marinade coats the chicken. Cover the bowl and refrigerate the chicken for at least 1 hour.
Cook the chicken: On a preheated grill, cook the chicken on medium to high for 18 - 20 minutes, turning halfway through. When you turn the chicken, brush on any remaining marinade.
Serve: Once cooked through, allow to sit at room temperature for 10 minutes before slicing and enjoying with your favourite side dish.
Recipe Tips
- The recipe requires the chicken to be marinated for at least an hour but I usually marinate the chicken overnight.
- For this recipe I used fresh herbs but dried herbs will work too.
- If making this lemon and herb chicken recipe for a larger group, you can easily double or triple the ingredients.
- This lemon herb chicken can also be baked. If baking, add the chicken and the marinade to a baking tray lined with parchment and bake for 20 minutes.
Storage
The cooked chicken can be refrigerated for up to 3 days.

Instructions

- Add the chicken to the marinade and mix to ensure the marinade coats the chicken. Cover the bowl with clingfilm and place the chicken in the fridge for at least 1 hour. The longer the better.
- Preheat the grill to a medium to high heat. Place the chicken on the grill then brush the chicken with the marinade. Grill the chicken breasts for 18 - 20 minutes turning halfway through. If your chicken breasts are large then they may need longer. Once cooked through, remove from the grill and allow to sit at room temperature for 10 minutes before slicing. Time to enjoy.
