If you're looking for a quick and tasty recipe then try this delicious chicken chow mein which you can make in around 30 minutes. Its includes roast chicken pieces with noodles, beansprouts and its the perfect fake-away to make at home.

There are many ways to make chicken chow mein but this version uses similar ingredients to the chicken chow mein that I buy from my local Chinese takeaway.
This chicken chow mein includes marinated roast chicken with beansprouts and noodles. It also includes a tasty chow mein sauce and will probably be quicker to prepare than to order and wait for a takeaway to be delivered.
Make this chicken chow mein recipe to enjoy as a quick mid-week meal or a weekend treat and you can also substitute the chicken for other ingredients such as prawns, pork or beef.
Ingredients for Chicken Chow Mein

- Chicken – I use chicken breast but you can also use boneless skinless chicken thighs.
- Marinade for the chicken – uses garlic paste, ginger paste, soy sauce, sesame oil and white pepper.
- Chow mein sauce – includes oyster sauce, soy sauce, light brown sugar and sesame oil.
- Noodles – I use dried noodles and prepare them myself.
- Sunflower oil – or any other neutral flavoured oil.
- Onion – for this recipe, I use a brown onion.
- Beansprouts – use fresh beansprouts.
- Spring onions – for garnish. This is optional.

How to Make Chicken Chow Mein
Make the marinade
In a bowl, combine the garlic paste, ginger paste, soy sauce, sesame oil and white pepper.
Marinate the chicken
Add the chicken breast to the bowl with the marinade and mix to coat the chicken. Cover the bowl and place in the fridge for 1 hour.
Bake the chicken
Line a baking tray with parchment paper and preheat the oven to 200oC. Transfer the chicken and marinade to the baking tray and bake in the oven for 20 - 25 minutes. Allow the chicken to cool then chop it into small pieces and set aside.
Make the sauce
In a bowl, combine the oyster sauce, soy sauce, light brown sugar and sesame oil then set aside.
Cook the noodles
Bring a pot of water to a boil then add the noodles and cook or soak according to the package instructions. Strain the noodles, rinse with cold water to stop the cooking process then set aside.
Make the chow mein
Add the sunflower oil to a large frying pan and allow to heat on a high heat. Once the oil is slightly sizzling, add the onions and stir fry for around 2 minutes. Add the noodles and chicken with any juices from cooking then continue to stir fry for a further 1 minute. Mix in the beansprouts then pour in the chow mein sauce and combine well.
Serve
Remove from the heat and serve. Optionally you can garnish with chopped spring onions.
Recipe Tips
- The recipe serves 2 but you can easily double this recipe and make 4 servings.
- Remember an adult should eat no more than 6g of salt a day. This recipe doesn’t use salt but uses soy sauce which contains salt. You can use low sodium soy sauce to keep the salt content lower but the chow mein will be lighter in colour.
Storage
You can store any leftover chicken chow mein in an airtight container and store in the fridge for up to 3 days. You can reheat it in the oven or microwave.

Chicken Chow Mein
Ingredients
Chicken and Marinade
- 1 medium chicken breast fillet (uncooked)
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- ½ teaspoon white pepper
Chow Mein Sauce
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 teaspoon light brown sugar
- 1 teaspoon sesame oil
Chow Mein Stir Fry
- 125g (2 nests) noodles dried weight
- 1 tablespoon sunflower oil
- 120g beansprouts
- 1 small onion sliced
Garnish
- 1 chopped spring onion optional
Instructions
- Make the marinade by adding the garlic paste, ginger paste, soy sauce, sesame oil and white pepper to a small bowl then mix the ingredients together. Add the chicken breast to the marinade and fully coat the chicken in the marinade. Cover the bowl and refrigerate for 1 hour.
- Line a baking tray with parchment paper and preheat the oven to gas mark 6/400oF/200oC/180oC fan. Place the marinated chicken breasts along with the marinade on the baking tray and bake in the oven for 20 - 25 minutes. Remove from the oven, allow the chicken to cool then chop it into small pieces and set aside.
- To make the chow mein sauce, add the oyster sauce, soy sauce, light brown sugar and sesame oil to a small bowl then mix and set aside.
- Place a pot of water on a high heat and bring to a boil. Once the water is boiling add the noodles and cook or soak according to the package instructions. Strain the noodles, rinse with cold water then set aside.
- To a large frying pan, add the sunflower oil and allow to heat on a high heat. Once the oil is slightly sizzling, add the sliced onions and stir fry for around 2 minutes. Add the noodles and chicken with any juices then continue to stir fry for a further 1 minute. Add in the beansprouts then pour in the chow mein sauce and combine well.
- Remove from the heat and serve. Optionally you garnish with chopped spring onions.
