This recipe makes a delicious sweet chilli prawn noodle stir fry. The stir fry is made with king prawns, noodles and delicious fresh vegetables.

If you’re looking for a quick mid-week meal then why not try this yummy prawn stir fry. The recipe is super quick and easy so you can have this delicious meal ready in very little time. This recipe is very similar to my vegetable noodle stir fry which is ideal if you’re looking for a vegan version of this recipe.
The recipe serves around 3 but you can easily double it or triple it to feed a larger family. Making this stir fry is a great way to include lots of healthy vegetables in your meal and you can definitely include other vegetables of choice. The more veg the better!

Ingredients for Sweet Chilli Prawn Noodle Stir Fry

- King prawns – use raw prawns or shrimp.
- Seasonings - salt, black pepper, onion granules, garlic granules and ground ginger.
- Noodles - use egg noodles.
- Oil – I use sunflower oil to cook the prawns and sesame oil to cook the vegetables.
- Onion - use a brown onion.
- Broccoli – I use tender stem but you can also use regular broccoli if you prefer.
- Carrots – use fresh carrots.
- Bell pepper – use a red bell pepper.
- Soy sauce – I use reduced salt soy sauce.
- Sweet chilli sauce – use any sweet chilli sauce.
How to Make Sweet Chilli Prawn Noodle Stir Fry
Season the prawns
Add the deveined prawns to a bowl and season with the salt, black pepper, onion granules and ground ginger. Rub the seasonings into the prawns and set aside.
Cook the noodles
Cook or soak the noodles according to the instructions on the pack then strain them using a colander. Rinse with cold water and set aside.
Cook the prawns
Heat the sunflower oil in a frying pan on a medium heat then cook the prawns for around 4 minutes, turning them halfway through. Remove the prawns from the pan then set them aside.
Cook the vegetables
In the same pan, heat the sesame oil then add the onions, carrots, broccoli and red bell peppers. Stir fry the vegetables for 4 - 5 minutes.
Combine all the ingredients
Add the noodles to the pan with vegetables then add the prawns back into the pan and toss everything together. Mix in the soy sauce and sweet chilli sauce then remove from the heat and serve.
Storage
Any leftovers can be stored in an airtight container and stored in the fridge for up to 2 days.

Prawn Noodle Stir Fry with Sweet Chilli
Ingredients
- 200g king prawns
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ teaspoon onion granules or powder
- ¾ garlic granules or powder
- ½ teaspoon ground ginger
- 120g egg noodles (dry weight)
- 1 teaspoon sunflower oil
- 1 tablespoon sesame oil
- 1 small brown onion peeled and sliced
- 150g tenderstem broccoli chopped
- 2 medium carrots peeled and sliced
- ½ medium red bell pepper sliced
- 2 tablespoon dark soy sauce
- 2 tablespoon sweet chilli sauce
Instructions
- Devein, rinse and dry your prawns with paper towels. In a bowl, season with salt, black pepper, onion granules and ground ginger. Mix the prawns to coat them all with the seasonings. Set aside.
- Bring a pot of water to a boil then cook or soak the noodles according to the instructions. Drain and rinse with cold water then strain and set aside.
- Add the sunflower oil to a frying pan and place on a medium heat. Once the oil has heated, add the prawns and cook for around 4 minutes, turning them halfway through. Use a slotted spoon and remove the prawns from the pan then set them aside.
- To the same pan, add and heat the sesame oil. Add the onions, broccoli, carrots and red bell peppers to the pan and stir fry the vegetables for 4 - 5 minutes.
- Add the noodles and prawns back into the pan and toss to combine all the ingredients. Mix in the soy sauce then the sweet chilli sauce and mix until combined. Remove from the heat and serve.
