Thai Inspired Cucumber Salad
This Thai inspired cucumber salad is light, healthy and goes with any main dish especially chicken or fish.

Salad Ingredients
- 1 large cucumber sliced
- ½ medium red onion sliced
- 2 tablespoon coriander/cilantro chopped
- 1 small bird's eye red chilli (Thai chillies) chopped
- 25g roasted peanuts chopped or crushed
Dressing Ingredients
- 1 tablespoon rice vinegar
- 1 teaspoon lime juice freshly squeezed
- 1 tablespoon sesame oil
- 1 tablespoon dark soy sauce
- 1 teaspoon soft light brown sugar
To a large bowl, add the sliced cucumber, sliced red onion, coriander, chillies and chopped peanuts then combine.
To a small bowl, add the rice vinegar, lime juice, sesame oil, dark soy sauce and soft light brown sugar. Mix well until the sugar dissolves.
Pour the dressing onto the salad and toss them together. Refrigerate for 10 minutes to allow the flavours to fuse then serve.
