Simple Tomato and Cucumber Salad

This tomato and cucumber salad is simple, easy and the perfect side salad to go with any main dish.

Ingredients

For the Salad

  • 4 large fresh tomatoes
  • ½ large cucumber
  • ½ large red onion peeled

For the Dressing

  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 1 tablespoon parsley chopped

Instructions

  • Make the salad: Rinse and dry the tomatoes and cucumber then use a sharp knife and cut them into small cubes. Place them on a plate lined with kitchen towel then cut the red onion into small cubes and also add them to the plate. Allow to sit on the plate for 5 minutes to help remove any excess water.
  • Add the chopped tomatoes, cucumbers and red onions to a salad bowl and toss the salad together. Refrigerate until you're ready to serve.
  • Make the dressing: In a small bowl, add and combine the olive oil, lemon juice, salt, black pepper and garlic powder then refrigerate.
  • When you're ready to serve, pour the dressing onto the salad and toss a few times then garnish with parsley.
