One Avocado Guacamole
If you only have one avocado in the fridge then you can make this guacamole which serves 2. Its fresh, spicy and goes great with tacos, tortilla chips or in burritos.

- ½ red onion
- 75g cherry tomatoes or 6 cherry tomatoes
- 1 large avocado
- 1 tablespoon lime juice from fresh lime
- 1 small garlic clove minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon crushed chilli or chilli flakes
- 1 teaspoon fresh coriander or cilantro
Chop the onions into small cubes then cut the cherry tomatoes into quarters and set aside.
Cut the avocado in half around the stone then remove the stone. Using a spoon, scoop out the flesh and add it to a plate. Use a fork and mash the avocado to your desired consistency. Add the mashed avocados to a bowl then mix in the lime juice.
To the mashed avocados, add the chopped onions and tomatoes then add in the minced garlic. Season with the salt, black pepper and crushed chilli then sprinkle in the chopped coriander. Mix to combine all the ingredients then refrigerate until needed.
