Healthy Strawberry Eton Mess

This recipe for Eton mess uses strained Greek yoghurt instead of whipped cream so it is a healthier version of this classic dessert. Make this Eton mess to enjoy for dessert or as a healthy snack.

Ingredients

  • 150g natural greek yoghurt (0% fat) I use Fage
  • 1 teaspoon clear honey
  • 100g strawberries (hulled weight) chopped into small cubes
  • 1 medium meringue nest crushed

Instructions

  • Add the Greek yoghurt to a small serving bowl then add in the honey and gently mix.
  • Add in half of the chopped strawberries and half the crushed meringue then gently mix in with the greek yoghurt.
  • Top with the rest of the strawberries and the rest of the crushed meringue then serve immediately.
