    Lemon and Herb Chicken Wings

    These chicken wings are marinated in a lemon and herb marinade that is made with fresh lemons and a selection of herbs. They can be grilled or baked and will go great with your favourite side but they are just as delicious eaten alone.

    Lemon and Herb Chicken Wings

    Chicken wings are one of my favourite foods to make. They are so versatile and you can marinate them and cook them in a variety of ways. Another great thing I love about chicken wings is that they go with most sides including potatoes, rice, salads or breads and they can be enjoyed for lunch or dinner. They can even be served as an appetiser with some dip.

    I love experimenting with different marinades for chicken and the marinade in this recipe is honestly one of my favourites. The lemon flavour goes perfect with the selection of herbs that I use in this recipe and together they create the best flavour.

    These lemon wings have a subtle fresh flavour so they are perfect for those that don't like strong flavours or spicy foods. The recipe is so easy and simply involves mixing the ingredients for the marinade and coating the chicken wings with it. The chicken is left to marinate for up to 2 hours before being baked to produce a succulent, flavoursome chicken.

    Ingredients for Lemon and Herb Chicken Wings

    • Chicken – use fresh raw chicken wings.
    • Seasonings - salt, black pepper and onion granules.
    • Olive oil - I use extra virgin olive oil.
    • Lemon juice – squeezed from a fresh lemon.
    • Minced garlic – or finely chopped cloves.
    • Fresh herbs - oregano, thyme, rosemary, sage and parsley.

    How to Make Lemon and Herb Chicken Wings

    Season the chicken

    In a large bowl, season the chicken with salt, black pepper and onion granules. Mix well to coat all the chicken with the seasonings.

    Marinate the chicken

    Add the olive oil and lemon juice to a bowl then add and mix in the garlic and all four herbs. Pour the marinade onto the chicken and ensure all the chicken is coated. Cover the bowl and refrigerate for a minimum of 2 hours.

    Preheat the oven

    Preheat the oven to 200oC and line a baking tray with parchment paper. Arrange the chicken wings with the marinade onto the tray and ensure there is space between them.

    Cook the chicken

    Cook the chicken in the oven for 45 - 50 minutes turning the chicken halfway through. Remove from the oven and allow to cool for 10 minutes before enjoying with your favourite side.

    Recipe Tips

    • You don’t have to use the same measurements of seasonings such as salt, black pepper etc. You can add more or less, according to your own taste.
    • I use fresh herbs for this recipe but you can use dried herbs if thats all you have to hand. The flavours may not be as strong.
    • Marinating the chicken overnight will produce more flavoursome chicken when baked but if not marinate for around 2 hours.
    • These wings can be cooked on the grill, in the oven or in an air fryer. The cooking time will vary between each cooking method.

    Storage

    Store any leftover cooked chicken wings in an airtight container and store in the fridge for up to 3 days.

    Ingredients

    • 750g - 900g raw chicken wings
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 teaspoon onion granules
    • 3 tablespoon olive oil
    • 1 lemon juice squeezed
    • 2 teaspoon minced garlic
    • 1 tablespoon oregano chopped
    • 1 tablespoon thyme chopped
    • 1 tablespoon rosemary chopped
    • 1 tablespoon sage chopped
    • 1 tablespoon parsley chopped

    Instructions

    • Place the cleaned chicken wings into a large bowl then season with salt, black pepper and onion granules. Mix the seasonings into the chicken to coat well.
    • To a smaller bowl, add and mix the olive oil, soy sauce and lemon juice then add and mix in the garlic and all the herbs. Pour the marinade onto the chicken and ensure all the chicken is coated. Cover the bowl and refrigerate for a minimum of 2 hours.
    • Remove the chicken from the fridge and allow to sit at room temperature for 10 minutes. Preheat the oven to gas mark 6/400oF/200oC/180oC fan and line a baking tray with parchment paper.
    • Place the chicken wings with the marinade onto the tray and ensure there is space between them. Bake them for 45 - 50 minutes turning the chicken halfway through. Optionally, transfer the tray to the top shelf for the last 10 minutes to broil. Remove from the oven and allow to cool for 10 minutes before enjoying with your favourite side.
